Pulled BBQ Chicken

Summer time, one of the best times of the year. Your house is the neighborhood hang out and the yard is in bloom with a lot of kids. The one thing you may dread is the drain on your wallet and refrigerator. I may have a simple solution to feed the kids and keep your wallet fuller.

Pulled BBQ chicken

1 pkg. of family chicken tenders or ternderloins not breaded. Rinse and pat dry.

1 bottle of your favorite BBQ sauce I used Sweet Baby Ray's

salt and pepper

flour tortilla

cheese sauce

shredded cheddar cheese

sliced black olives

sour cream

sliced jalapenos

diced onions

Preheat oven to 350 degrees. Take a baking sheet and put about 3/4 cup of BBQ sauce directly onto the pan sprinkle with a little salt and pepper. Place your rinsed chicken tenderloins onto the sauce. Once they are all on the pan then put another 1 cup of sauce on top. Bake for approx. 28-35 minutes when you can see they are not pink in the center let them cool for a few minutes. After cooling for about 10 minutes transfer to a cutting board with 2 forks shred the chicken. Put the chicken in a bowl when all served. You can either heat the tortilla shells and build and fill them just as you would a soft taco top with favorite condiments just as cheese sauce, jalapenos, black olives and sour cream with a sprinkle of cheddar cheese on top. Or you can make up a salad with above items or your favorite salad items and add the chicken to the top. Enjoy.
